Spicy Tomato Chicken

This Malay Spicy Tomato Chicken is a traditional Malay meal in which the chicken is seared and stewed in a thick spicy and sweet sauce.

850 gram of chicken parts
1 teaspoon of salt
1 teaspoon of turmeric powder
A dash of pepper

3 shallots
2 cloves garlic
2 red chilli
2 cinnamon
3 cardamoms
1 red onion, sliced
1/2 cup of tomato ketchup
1/2 cup of Ayam brand coconut milk
1/2 cup of water
1/3 teaspoon of salt
1 tablespoon of sugar
1 cup of frozen mixed vegetables

Malay Spicy Tomato Chicken Cooking Instructions
Marinate the chicken for at least 30 minutes in a mixture of salt, turmeric, and pepper.
Shallots, ginger, garlic, and chili are ground.
Heat a wok with 1/2 cup oil. Cook the chicken until the skin becomes golden. Prepare your dish.
Remove part of the oil, leaving roughly 2 tablespoons remain.
Sauté the milled ingredients over medium heat until glossy, then add the dry spices and chopped onion and cook until the onions become transparent and wilt.
Cook until the gravy has reduced and the chicken is cooked through with the remaining ingredients in the pan. Plate and serve.
