This delicious stir fry almond chicken dish combines chicken, vegetables, and almonds in a light oyster sauce. Almond Chicken is a quick and easy way to get supper on the table without spending a lot of effort.
1 lb of chicken cut or slices to bite size
1 ½ tablespoon of soy sauce
2 tablespoon of oyster sauce
1 tablespoon of rice vinegar
1 tablespoon of sugar
2 cloves of minced garlic
1 teaspoon of pepper flake for spicy stir fry (optional)
Marinate for 1 hour
For the vegetable
1 stalk of celery thinly slices
1/4 of white onion thinly slices
1 small carrot thinly slices
1/3 to 1/2 cup of toasted almond
1/3 to 1/2 cup of no salt chicken broth or water
1 green onion cut to small pieces
2 tablespoon of oil for stir fry
Stir Fry Almond Chicken Recipe Directions
Heat a wok or frying pan until it is hot.
Add oil to pan, then add the marinated chicken (with all of the marinade liquid) and carrot and stir fry for about 3 minutes, or until all of the marinade liquid has evaporated and the chicken is no longer pink but not cooked.
Now add celery and some chicken stock or water to pan and stir well. Cook until the chicken is almost done, then add white onion and toss well. Cook until the chicken is done.
Turn off the fire and stir in the roasted almonds and green onion.
Serve immediately with steaming rice. This recipe may also be made with cashew nuts.
